The ice cream cake is the classic summer dessert! It is the ideal dessert to prepare when the egg whites are left over and you don't know what to do with it (you can't always make macaroons and meringues) and here is a very easy recipe to dispose of the egg whites by making a homemade ice cream cake with a flavor similar to that of Viennetta .


How to make the ice cream cake

Beat the egg whites until stiff with 50 g of icing sugar.

Separately, whip the cream with the remaining icing sugar.

Combine the two compounds, the cream and the egg whites to form a single cream, add the vanilla essence and mix gently so as not to disassemble the mixture. Put in the freezer for about twenty minutes.

Meanwhile, melt the chocolate over low heat in a saucepan in a bain-marie.

Line a springform pan with parchment paper and spread a first layer of egg white cream.

Then pour some melted chocolate on the egg white cream and sprinkle with the chopped hazelnuts.

Cover with another layer of egg white cream and put the ice cream cake in the freezer for 2 hours.

Decorate the cake to taste, slice it and serve!
