Crinkles with lemon
Butter (at room temperature) cut into cubes (in a bowl, of course), add sugar and lemon peel. Mix until a frothy composition is obtained.
Incorporate the egg and sprinkle with salt. Gradually add the sifted flour and baking powder, mixing the composition for complete homogenization.
Add the lemon juice and mix until you get a dense, creamy composition.
Cover the bowl with cling film and keep cold for 2-3 hours.
From the obtained composition, suitable balls are formed which we will pass through caster sugar, and then through powdered sugar, so that they are completely covered.
The biscuits are placed in the tray lined with baking paper, at a distance of 2-3 cm each. Bake for about 12 minutes at a temperature of 160 degrees C.
After baking, they are left to cool completely, after which they can be stored in metal boxes, hermetically sealed.
